Both Australia and New Zealand claim the flat white. Sydney café owner Alan Preston says he put it on his menu in 1985; in Wellington, barista Fraser McInnes says he named it in 1989 when a cappuccino's milk wouldn't froth. The drink is defined by microfoam — milk steamed into tiny, glossy bubbles rather than a stiff head of foam.
